When it comes to making balsamic dressing, there are no set rules; just traditions passed down from father to son for generations. Saba is painstakingly made by the Leonardi family of Modena, Italy, since 1871. They still grow their own Lambrusco and Trebbiano grapes, and pick them by hand (well, most likely other people do; the Leonardi’s probably just watch from their fabulous villa). Regardless of how they come by the grapes, the Leonardi family must be doing something right (see what we did there?), since Saba is widely considered to be one of the the best, if not the best balsamic dressing around. (Just ask Zeno.) Saba dressing is marvelous on aperitifs, rice, soup, cooked vegetables, roast turkey, fresh mozzarella, fruit salad, ice-cream and sorbet, yogurt, and to sweeten teas including herbal tea.
